Every time that I go to make this meal, I never can find the recipe. The first time that I made it, it was more of a stew, because I fo sho will not eat soup. I didn't blog it because everyone and their Aunt DeeDee has a Taco Soup recipe, but now I am doing it so I won't have to search for it every time.
I wish I could find the original, but this is what I concocted today.
Not a fan of the huge chunks of tomato.
What I used:
1 lb lean ground beef
Half of an onion
Can of black beans
Can of whole kernel corn
Can of tomato sauce
Big can of diced tomatoes (not a fan)
Packet of taco seasoning
One cup of water
Topped it off with shredded cheddar and sour cream. If I had a diced avocado, that would have been divine.
When I get in the store I noticed that I just wrote down 8oz of tomato sauce, and 28oz of tomato. No description of said tomato. I didn't know if it was diced, stewed, whole.....so I called my Mama. She tells me stewed.
Not gonna eat slimy red eyeballs. So I got diced, but they were still kinda chunky.
I then get this from Rebecca....
I started off with throwing half of an onion in the food processor. I knew I was going to have to eat slimy tomatoes, so the thought of biting into an onion made me feel sad in the pants, so I pulsed it vigorously.
I threw some butter into a skillet and added the onions first, then the lean beef.
I strained the beef and onions, rinsed the black beans, then dumped everything, along with a cup of water, into a pot.
I mixed it all together and let it come to a boil, then put it in the slow cooker for an hour on high.
Look who made an appearance......
That's pretty much it. I added a handful of shredded cheddar, a dollop of sour cream, and some Frito Chips.
