Day 15I knew my sugar was still going to be high this morning. It was 311, a 90-ish point drop from yesterday, but I still feel like doo doo. Breakfast was leftover Hot Dog roll ups, and then Jared and I went fishing. It was so hot, sun blazing. I caught three, lost one on the bank, caught a big ass turtle. But dinner was delish. I ate mine with a little creamy sriracha sauce. I made sure that I checked the carbs. I didn't eat lunch, just snacked on some pork skins and cream cheese. Jared said he can feel the difference on my body, but I don't see or feel anything. I still haven't stepped on the scale, I know I have a ton of sodium from the pork skins and the Diet Sodas. Day 16Have y'all ever loved someone SO much, that seeing them takes your breath, you get butterflies, you get excited when you hear them pull up in the driveway, and your only goal is to love them the best you can, and be the absolute best that you can be for them? Well I have that. But you know what? Sometimes you want to square up. The year and 10 months Jared and I have shared a bed, I have have like 18 nights of good sleep. He snores. When he rests his arms, his hands are in my hair, and sleeping, I think it's mice. He moves his fingers right before he goes to sleep and in the middle of the night, he digs his fingers into my skin. I sleep a good two hours a night. So when I wake up this morning, I am 9/10 pissy. I know I have to go to work all day. I check my sugar, it's 330. I get even more pissy because it's still not dropping. BUT! I will have health insurance soon, so I can get the primary care I need. AND!!! I would rather sleep next to Jared and get 2 hours of sleep, than 23 hours without him. I ate sausage links for breakfast, and lunch was turkey and cheese on the leftover zero carb tortillas. My snack today was cashews and a spicy Slim Jim. For dinner, y'all just have to read the blog. Spicy Creamy Shrimp + Broccoli Slaw. I would eat this every day if I could. Day 17So I remembered to take a shot before bed. I ate like I was supposed to yesterday, and the blood sugar was 308. **shrugs** I had good food today. Breakfast was three eggs with shredded mozzarella, and turkey bacon. Lunch was those bomb ass leftovers from yesterday. I didn't love the broccoli slaw, but I have thought of ways to jazz it up for next time. Snack was this Quest cookie and I had a Slim Jim earlier. The cookie was okay. I would just rather do without sweet snacks that are made with sugar substitutes. They're all kind of cardboard tasting. Dinner was supposed to be eggs, cheese, and ham, but while I was waiting for Jared's food to be done, I remembered there was a Blue Moon. I couldn't see it from the yard, so I ended up driving around way too long trying to see it head on. Oh I could see it through the trees (hundreds of thousands) but I knew there would be ONE place where I could see it. The good news is, I did get to see it. And it was majestic. But did I get ONE decent picture? Negative. Dinner ended up being leftover fish, with cheese on top. I alternated between sriracha mayo and parmesan garlic sauces for dipping. Day 18I am getting really tired of not eating bread and chocolate and seeing the numbers stay the same. Sugar was 309. I did remember my insulin before bed. Scrambled ham, eggs, and cheese for breakfast. For lunch I just took a piece of cheese and melted it on a piece of turkey and had leftover pork skins and cream cheese. Dinner was a repeat scrambled eggs, ham, and cheese, and I had a tiny bit of crab leftover from earlier this week, and I just heated it up and added cheese. I legit want to eat a foot long sandwich with ham, cheese, mayo, and pickles. Like, a while loaf of French bread. Trying to stay alive sucks. Day 19Sugar was 3...0...6. I hate everything. Breakfast was sausage links, and lunch/dinner were hot dog roll ups. Even uglier than the last batch. I used to make these with low carb tortillas and they were larger, but the zero carb are a lot shorter, and the little wiener pokes out of both ends, but I think it tastes better this way. I swear I did not intend to make that sound as nasty as it did. **tee hee** I made Jared and The Child pork chops w/ potato salad. It was a hell of an evening with a wildfire nearby (not close enough to worry but I did anyway), and Jared hit and killed a deer. He's okay, his truck eventually will be. Took a shot, went to bed. Day 20I didn't even check my blood sugar this morning. I got up, washed my face, applied deodorant, face cream, got dressed, got to work, ate breakfast, and then hit the road. I didn't have anything for lunch, so when the second driver and I stopped for break I got a burger. It had a spinach wrap in place of a bun so I went with that. It's okay they forgot, it's a busy Labor Day weekend. I take the burger apart, and on the top bun was all of the cheese, and the bottom had all of the mustard and mayo. It's not above me to lick it all off in public, but I just kind of picked off the bread around the cheese, and tried to salvage the condiments. When I got home I ate what was left of the chive and onion cream cheese and these Parmesan whisps. Now let me tell you about dinner. I made chicken legs in the air fryer, seasoned them with Magic seasoning, a little Slap Ya Mama, garlic and onion powder, and on the other side of the chicken, blackened seasoning. I cooked them for 35 min at 400, then took them out, gave them a coating of garlic parmesan sauce, and them baked them for 30 more minutes. I made Jared and The Child wild rice for a side, and I made Ugly Keto Broccoli Casserole for me. 10/10. Will make again. Day 21Not to leave a blog post on a negative vibe, but I am not feeling it today. I didn't eat anything today that I shouldn't, but I moved to the couch around 3am, Jared was snoring and I couldn't sleep. I woke up exhausted, cramping, headache, and I didn't check my sugar or even eat. Around noon I ate a couple of pieces of leftover chicken legs, and I saved one bite of the broccoli casserole. Jared made dinner for me. Canned chicken, a little bit of canned fire roasted tomatoes, a lot of seasonings, and several cheeses. It was delish. Now I do forget to take a shot sometimes. No I haven't received the paperwork for my health insurance to start going to the doctor. Yes I have messed up a few times buy not thinking to read labels. I am getting aggravated. It's too hot to get out and walk. The humidity is as high as the temperatures and it's difficult to breathe. My sugar hasn't been below 270-ish. Not too sure what else to do at the moment. Eating healthy was my (last, lol) option to get this under control. I am not going to stop. I will continue this way of eating. I just hate it right now.

Day 8My sugar was 284 this morning. I am getting there! I am still not sure exactly what I had for breakfast, but Jared started cooking meat last night in the smoker, it cooked all night, and this morning we ate it. Lunch was a handful of pecans. Dinner was 3 eggs with ham and cheese. I tried to made one of these: Did not work. I know what I did wrong, so next time I will NOT use Lisa-math. I ate it anyway, 'twas yummy. I couldn't tell you what Jared ate. Something with rice, and he cooked a can of field peas and put chunks of onion in it. I didn't see The Child but a split second to and from the bathroom today. DID I MENTION THAT THE POWER WENT OUT! When it was 108 outside!! Not long, but enough for me to drag out all of the fans and get dramatic about it. Super duper craving sweets. I made a glass of sugar free Tang, so maybe that will trick my brain. Day 9Y'all. Today. I am so very grateful. but I wouldn't ever want to do it again. Errands early, so I ate cheese rolled up in a turkey slice for breakfast. Sugar was 286. We got to the chiropractor's office and had to change a tire. Jared did. I watched. For lunch I got him BOGO Whataburger's Southern Double cheeseburger, and my plan was to get a grilled bun less sandwich, but I am a coupon whore and saw where Chili's had a 50% coupon, so I got a burger, fries, and house salad for $5. Jared got the fries. I got home, took off the bun, added mayo and mustard, and went to Heaven a little. I did take a bite of Jared's burger, I have always wanted to try it. I will document the entire day on my regular blog, but there was a wildfire close by, I had to pack a necessity+only+but+our+place+may+go+up+in+flames bag, and we just waited. Jared had started cooking a roast the night before. Literally minutes after we received the alert that the fire had been contained, the power went out. The temperature was 107 outside. The power company said the ERT was 10:00pm. He ate, but I did not, I was a ball of nerves still. Around 10:00pm the power company showed up, but it was another 10 hours before we received power. I ate a bowl of the roast, with a few carrots and potatoes. Carbs don't count when you're living off of the land. I sure didn't want to waste any carbs on potatoes, but my options were limited with no power. I slept ZERO. Not one minute, and then got dressed at 6:00am and went to work. Day 10Today was better. Now I complained the entire time because I am beyond exhausted, I needed a shower, and I wanted a whole loaf of French bread. My sugar was 311. I expected higher, my insulin is in the fridge that I didn't want to open, and I did have a few extra carbs yesterday. I have been looking into insurance plans that I could possibly afford out of pocket, so hopefully I can get the medicine that I need soon. I am looking forward to temps below 105 so I can start walking in the evenings. It physically hurts to go to the car and back, you can't take a deep breath and it burns. Breakfast was sausage links and lunch was....leftover cauliflower pizza from Sunday. I had left some in the work fridge. Nevermind that it has been 3 days. I didn't have anything else, because everything I had bought for the week had to be cooked at home. Dinner was leftover roast, but today I got to eat it the way I intended yesterday. Just meat with a very few carrots, liquid drained, with cheese and sour cream. When I stopped for break with the first driver, I had one of these. Tasty, but I probably wouldn't get it again. Day 11Today was weird. I went back to sleep after Jared went to work, and I woke up minutes before I had to leave. My blood sugar monitor was is the car, what I was supposed to have for breakfast and later dinner I forgot in my purse, so it stayed outside in the 109 heat for over 12 hours. The dogs were happy. So while I got dressed I cooked what I was supposed to have for lunch, scarfed it down, and went to work. No clue what was my sugar was. By the time I got off at 7:00pm, I was hangry. Jared was like "so...there's an Asian place nearby". I was bummed because that meant no sushi, no Crab Rangoon, no rice noodles...but I did find stuff to eat. Mostly steamed broccoli, sauteed shrimp, and a salad. Maybe a bite of an egg roll, 2 pieces of fried shrimp, and the inside of a spicy tuna roll. This is at least the 3rd of 4th time this Summer that I have forgotten food outside to spoil. Anything is better than what poor Levi had to endure today, LOL Day 12Blood sugar was 327. I still haven't remembered to take a shot but like 3 times. Why I am I like this. Sausage links for breakfast. Lunch was good. I saw this on Tik Tok. I said even if I screw it up, I can still eat it. Place sliced mozzarella, pepperoni, sprinkled with Italian seasoning onto parchment paper. Bake at 400° for 6 minutes. Roll them up and enjoy. The pepperoni rolls were delish, but not filling as a lunch. When I got to work I was hungry, but we stop for break 2 hours in, so I grabbed some snackage. The longer the day went the more tired I got. I got home, made sausage patties and biscuits for the fam, and I ate Lil' Smokies. Too tired to make eggs. Day 13I woke up and went to work early, still ticked that Walmart didn't put some things in with my pickup order that I needed today. I got a refund, but I didn't have time to get anything. As usual I had sausage links for breakfast, and The Child brought me a JUMBO cheeseburger for lunch. I took off the buns and vegetables. I tossed the buns, ate the meat and cheese, and then the vegetables separate. I am going to show you what I had for dinner and dessert. Then we will discuss. Per Jared's request I made sirloin strips and steamed veggies. I wasn't very hungry from that bomb ass lunch. I had a bag of frozen cauliflower, so I heated it up, but a few strips of steak on my plate, streamed the NASCAR race on my laptop, and we had all the lights out, minus the over the stove light. The cauliflower was spicy, it had a buffalo sauce additive pack, so I dipped it all in Ranch, all focused on Jared and the race. The consistency was a little different, but hey it was cauliflower and I am being healthy! A little gummy, but delish. One of my favorite low carb desserts. We shall discuss. Day 14So what I have learned in two weeks; I have got to remember to take insulin, and I have got to start reading labels. I get to work, in a mood, because the power went out again, and I slept less than 4 hours. I am trying to leave home by 6:10am, because I have to drive like a grandma until I get a new tire. What I made for lunch, I didn't take a picture of because one, no power, and I was in a hurry, and two, it's really ugly. But you take chili (no beans), put it in the bottom of a baking dish, take a no carb tortilla, wrap up a wiener, cover them all in more chili (I use the entire pack), and cheese, and bake on 425 for 35 minutes, covered in foil. I did read the label, and I knew how many carbs were in it, but I knew probably half of the chili I wouldn't even eat, so I packed them up (in the dark) and headed out. When I got to work, I got some water, my paperwork, and ate breakfast. As soon as I went to take the last bite I remembered that I haven't took my sugar yet. I took it quick, knowing the food I just ate had not had time to affect anything, and it was ....402. How in the hillbilly hee haw hell was it that high? I've been eating right! So while waiting for my driver to get there, I am racking my brain, dissecting every thing that I have eaten in two days. I knew the cauliflower wouldn't be much, it was just steamed in a bag, and the sirloin was just seasoned and cooked in a little oil. No flour. So I pull up from the Walmart app where I bought the cauliflower (not in store, so I didn't read anything before or after I bought it), and it had NINETY CARBS! That is like THREE pieces of pizza! 2 grilled cheese! BUT IT GETS BETTER!!! I tell Jared, and he knew it was high, he can always tell by how I act. I eat dinner.... ...and then I go lie down. He comes in there a few minutes later and goes "Question. Did you eat the entire container of that Cool Whip mixture?" I said "dang I saved y'all a whole container in the fridge! But yes, I ate it over the course of the race." Y'all. I remember years ago when a bunch of us were low carbing the go-to sweet snack was take a container of Cool Whip (I always got the Lite), add a packet of your favorite Jello powder, stir, freeze, then eat. One girl lost over 100 pounds during the course with this as her favorite treat. It had 3 carbs per serving. That's what I saw when I flipped it over. However, 25 servings. So that was another 70 carbs that I ate. All from not using my brain. Lesson learned. Two quick photos. Levi enjoying a grilled cheese: My friend Susan, who is amazing, always creates the coziest of everything that is home. She made burgers and hot dogs for her family and this was her set up: I knew Jared was making burgers so I showed him the pictures and said "This. Make this". Well he delivered! Day 1I literally failed right off the bat. I have a weeks worth of low carb breakfast, lunch, and dinners. I decide last night (foolishly) to purge the house of everything that may tempt me on my low carb journey. Never mind all of the snacks. bread, or sodas, I am good on that. I meant the alcohol. Let me tell y'all one of my favorite drinks. I mix 1 shot of this with Peach Mango juice (sugar free), Sugar Free Tang, a splash of Diet Mtn Dew, and lots of ice. Normally I drink 2, sometimes 3, until I start getting goofy. IDK how much I drank but I think it was over half a bottle. Stupid. ANYWAY, I usually get my work schedule on Sunday night, and I figured at midnight that I am off on Monday. So I wake up at 6:08am, headache, skin dry, and I had to vomit. 'Twas not attractive. I guzzled water, zero sugar Powerade and laid with a wet washcloth on my forehead until 9:00am or so. I didn't want any food, and I can't find my blood sugar monitor. (update: I found it but there are no test strips) SO! This is not going well. I ate around 10:30am, Banquet Pork Links. Not the healthiest but I want to save the stuff I bought for work days. I take medicine daily. No prescriptions, I currently have no health insurance or a primary care doctor. My job doesn't offer insurance, so I try to find OTC stuff that will help with issues. I take Milk Thistle. Not sure why, Jared said to, a blood sugar support supplement. Vitamin B, Inositol for PCOS, and I am currently taking an antibiotic because there is always something wrong somewhere. I also said that I wasn't going to drink more than 2 Diet Sodas, and I just popped open my 3rd one. It's 11:27am. For dinner I made roasted chicken legs with seasonings and a little bit of garlic parmesan sauce. Since I decided I was going to officially start low carbing tomorrow, I ate the wild rice that I cooked for the family instead of the cucumber slices that I bought for me. It's who I am as a person. Okay, I have some strips now, an alarm set, and we shall see how the first real day goes in the morning. My bad thing today: Turkey and cheese sandwich on French bread. Day 2Well it didn't start off as much of a disaster as yesterday, but I ended up waking up just in time to get dressed, microwave 3 sausage patties, fill up my water cup and hit the road. We had errands to run, and Jared had a dr appt, and then this afternoon I have work. When I got home near lunchtime after smelling and watching Jared eat a deep dish personal pizza from Little Caesar's, I ate 2 drumsticks from last night and 1/2 a sliced cucumber. Dinner was pretty much the same, leftover drumsticks, a couple of pickle slices, cucumber, and I dipped the cucumber in onion and chive cream cheese. All while I watched Jared and The Child eat chimichangas that I baked with red enchilada sauce, cheese, and pico de gallo. I hate it here. I took my blood sugar this morning. I prepared myself for it to be high, seeing how junky I ate and drank yesterday. Yeah. It was 422. Goals: What is a good blood sugar level for a type 2 diabetes? A blood sugar target is the range you try to reach as much as possible. These are typical targets: Before a meal: 80 to 130 mg/dL. Two hours after the start of a meal: Less than 180 mg/dL. I haven't started taking insulin again, but if it's that high in the morning then I will. I also concluded that I need to get a digital bathroom scale, because ours is clearly broken. Adding 40 and 50 pounds. Ridiculous. My bad thing today: A big bite of Jared's pizza. Day 3I woke up feeling like doodoobutt. Bonus off day. I had sausage links for breakfast, and a slice of cheese that Jared threw at my head. My sugar was 374, which is high, but a little better. Around dinner time I am going to take a shot and see if it helps. A shot of insulin. Not vodka. I know when my work schedule goes back to normal it will be easier, because I am limited to what I have with me, like here at home I have ALL of the diet drinks that I know are bad, and at work, I control what I have in my bag. Yesterday I took 44 oz of water, so it was either that or go thirsty. Lunch was sliced turkey, cheese, an apple, and some of the onion and chive cream cheese. Dinner was not what I had planned. It was supposed to be Queso Chicken, and I was going to serve mine with asparagus, and every one else over rice. Yeah. The chicken that I bought on Friday expired and I could smell it before I even opened the package. After I teared up and pouted about it, for me I made (frozen) grilled chicken strips with melted sliced provolone, half a cucumber, and a handful of sun dried tomatoes I made earlier in the oven today. Jared had Mexican rice with canned chicken. I honestly don't know what The Child ate, but they're still alive, so #score. I finally drank water with a meal :) For the sun dried tomatoes, just slice up a tomato of your choice, thin, spray all of the seeds out (or it will be gummy), season with sea salt, pepper, garlic, and bake on 250 for about 3 hours. You want them to look shriveled and burned. So good. Before bed I am going to take a shot of insulin to see if that helps the numbers go down, as they're always higher in the morning. My bad thing today: a bite of Cinnamon Salt Water Taffy. Day 4Because of who I am as a person, I went to sleep last night forgetting to take an insulin shot. I got up at 6am, made sure Jared had everything that he needed for work, and stalked him on Life 360 until he got to work safely, then I went back to bed. I am working a half day today, and the driver won't be there until school is out. I feel miserable. I was too tired to keep my eyes open to focus on reading or watching videos, but I couldn't go to sleep either. My blood sugar was 374. I didn't feel like eating breakfast, but I did eat a chunk of rotisserie chicken and some cubed cheddar. Lunch was just a couple of slices of ham and turkey, 2 slices of sharp cheddar, and some cottage cheese. I only had one Dt Mtn Dew. When I got to work, I was hungry. Like hangry. I ate some shelled pistachios and a Slim Jim. This was my face: Now when I got home... Y'all. I have been dreaming of this salad all day. Iceberg lettuce (which I hate but it's what I had), cheddar, sun dried tomatoes, cashews, almonds, French Fried Onions (which have like 1 carb), some of the rotisserie chicken, a sprinkle of bacon bits, cactus from the yard (IDK, ask Jared), and half a cucumber. Tiny bit of Ranch dressing, because it's all I had. I hurt from eating all of that. But man...it was 10/10. Also while waiting on Jared to assemble his salad, I ate some pork skins with the onion/chive cream cheese. I am spent. Shower and bed. AFTER I TAKE MY SHOT! My bad thing today- one bite of a grape popsicle. Day 5It's 5:11am. I have been awake for an hour. Nothing keeping me awake, just body aches. My sugar was 310 this morning, so it's slowly creeping down. No work today, the driver cancelled. This has been the most abnormal work week that I have had since I have been there. If that rooster outside doesn't stfu, he is going to be lunch today. I made the most bomb ass eggs. I buttered a skillet, scrambled three eggs, added seafood seasoning, a tiny bit of sea salt, onion and garlic powder, a handful of diced ham (that I cooked for one minute in the microwave first), and a handful of shredded cheddar. I have been feeling pretty puny, so I laid down until 1 or so, and then ventured out to do errands. I didn't eat anything for lunch. I had dinner planned out, but The Child said they were getting burgers and fries, so I just ate the same salad that I had last night. It was even better! My bad thing: when I was heating up Jared's burger and fries, out of instinct I ate of the of the Cajun fries. I was bummed too, because I was going to make my bad thing a bite of salt water taffy, but no. It's still on the counter. Day 6Raise your hand if you forgot to take your insulin shot before bed! I got to work at 6:45am, took my blood sugar, and I can't remember the number, which is saved in the machine, but I know it was 3 something. I went ahead and took a shot. I ate sausage links for breakfast, and when we stopped at French Market for our driving break, I DRANK WATER!. No beignets, no breakfast meat pies....water. TAP WATER. I also learned that I need to read labels better. For lunch I had grabbed a Lean Cuisine, and IDK why I just assumed being lean, it would be low carb. Negative. 40 carbs. It was all I had, so I heated it up, but it was a hard pass. Now if I would have used my brain, I know that not one of those three foods are low carb. I took a couple of bites and just tossed it. It was skanky. When we stopped for break with the second driver, I got a really large Slim Jim. I was browsing in the Atkins/Quest section for snacks, and was just about to open a brownie up when I noticed the 40 carbs. What is it with 40 today? Just because it's in the healthy section, doesn't always mean healthy for everyone. I did learn that if you order from Whataburger that bun less in an option. I am sure all of fast food has that option, but this is Natchitoches, and it's ratchet. I didn't get anything today, but I was thinking hard about a grilled chicken sandwich. I came home and heated up the last of the rotisserie with melted Provolone. I made Jared and The Child breaded fish fillets and tater tots, and I was going to just scrounge around and find something for me, but I ended up asking Jared to bring a cauliflower crust pizza from the store. I loved it. It did have more carbs than I was looking to eat, but I have been really weak, so maybe a healthy hit of carbs will make me feel better. I added shredded mozzarella and diced ham. Day 7While it's technically only been 6 days, because day one I ate regularly, I survived a week. I legit stuck to it, but I have a very long way to go. My sugar this morning was 333, which means, 1, the cauliflower pizza had more carbs than I needed, and 2, I need to up my insulin dosage. I am hoping that the body aches, pains, and headaches go away soon. Breakfast was sausage links and lunch was leftover pizza. For dinner I made sauteed shrimp and sausage, and I roasted some carrots. I didn't eat too many carrots, but they were el-tasty-o. This is Jared's plate, I sucked my plate down SO fast. My work schedule next week will be normal, so I can control how much I am snacking, and I will drink more water since I won't be home where the diet sodas are. I have spent a lot of time this week searching recipes that are simple, with fewer ingredients. One lunch that I like is to just wrap a slice of cheese in a piece of turkey, and maybe a pickle on the side. I am loving the pork skins and cream cheese snack, it keeps me full when I am rumbly, but my ankles were a tad swollen due to all of the salt. I have a ton of ideas when I go grocery shopping on Tuesday, and I am going to try and find dinner meals for the entire family! Planning my meals plus theirs are already wearing me down. I didn't even step on the scale. For one, Jared's scale is janky and I need to buy a digital one, and 2, I know there won't be any weight loss this early, and I don't want to get funky about it. Y'all want to know what my bad thing was today? NOTHING. I am eyeballing those leftover carrots, though. |
