I haven't stopped eating low carb, I just can't remember to document. I do well for a week, keeping track, and then nothing. I even got a tracking app to help keep track of carbs, my blood sugar, but I suck as an adult. So what I will do for now is just keep track, for me, the things that I am eating, so I can reference and get ideas when meal prepping. Low carb isn't hard at all, but you have to plan it out. You have to buy extra food if you're the only one doing it. You for sure have to put sticky notes on everydamnthing to make sure your stuff doesn't get eaten. Tonight I made Unstuffed Bell Pepper Casserole for the fam, and I ate chicken thighs covered with cream of shrimp, cream of chicken, seasonings, baby shrimp, with a block of cream cheese melted on top. I didn't take a picture, but it was ugly. I have eaten a few burger bowls lately. Two beef patties, garlic/onion/ranch/ powder, and taco seasonings. Cover with cheese, a squirt of mayo, mustard, and sriracha. A couple of pickles when I can remember. I like to take crab, shrimp, cook it up with sriracha, cream cheese, alfredo sauce (just a little), and seasonings. I add in just a couple of water chestnuts, and I roast some broccoli. When I absolutely have to have a sandwich, grilled cheese. or hot dog, I use this Keto bread. I make so many salads. I switch it up a little, but my go to is chopped romaine, pecans, sunflower seeds, cucumber, feta cheese, cheddar cheese, grilled chicken, sun dried tomatoes, and just a couple dollops of Caesar dressing. I love love these country style ribs. Just season them up, sear the front and back, and them cook on medium. I honestly don't remember what cut of meat this was, but I downed the entire thing in under 3 minutes. Cooked, sliced ham on Keto bread, steamed veggies. I have been trying to change up breakfast. I normally just grab turkey links or sausage patties, but I have been trying chaffles, they're easy and delicious, but I don't think eating half a bag of cheese for breakfast is good for my tummy. This is the only time that I remembered to take a picture, and it was the only one that was terrible, it stuck to the top. I ate it anyway :) TWO grilled chicken patties, mayo, mustard, a slice of cheese on each. Keto bread. Jared gave me two tater tots. Some days for lunch I just grab a handful of pork skins and a slice of cheese. Some days we just have turkey and cheese. But I can guarantee you there will be cheese. My lunches are usually pretty puny, but I try not to spend too much, so it's usually some kind of leftover. Today I had 2 leftover chicken thighs (I ate one pre-photo) with melted cheese (shocker), and cottage cheese. This is one of my favorite things, and I have made it 3 times. Broccoli, cauliflower, smoked sausage, cream cheese, shredded cheddar. GET IN MY BELLY! Here it was a side for dinner, but I make it just for me when I cook the fam something carby. Roast the broccoli and cauliflower first. Trust. Me. On super lazy days this is it. Turkey links, protein coffee, almonds, and water. This made me a sad panda. At work we stop for break usually at the same place daily. I had a leftover chicken breast for lunch, but I was really hungry, so I grabbed a premade salad at the gas station. It looked really nice in the package, and being I bought it at 9:30am, I assumed it was one of the first ones that was made for the day. Yeah, maybe the day before. After I chopped up the chicken breast that I brought and stirred it all up, took a big bite....it was brown, slimy, and sour. I cooked thin chicken breast, seasoned it with the usual garlic/onion/Cajun seasoning, and then I added a bunch of Greek seasoning. I ate 2 big pieces, with no side, because I think I made mac and cheese and BBQ beans. I was going to chop up a cucumber and have it with cottage cheese, but I was like eh, let me just eat another piece of meat. Follow me for more nutrition advice. This was a yummy breakfast. I know grapes aren't diabetic approved, but they're better than crack cocaine I suppose. I have tried a couple of these bars, and this has been my favorite so far. What I want, is an entire row of Peep heads like Levi had. I had this for breakfast. Leftover crab, melted cheese, sriracha, and a little bit of mayo. Ugly, but tasty. I know imitation crab is higher in carbs than most of the meals I eat, but this girl needs to go to the grocery store, and I can't keep eating sausage patties every day, my ankles are swelling, yo. Breakfast is usually better when I am off from work, or go in at 11:00am. Today I had sausage patties, 2 eggs cooked in the microwave with cheese, leftover avocado, and some cottage cheese. Lunch was tuna with a little mayo, sriracha, and garlic powder with a slice of provolone cheese. I meant to pack Everything Bagel seasoning, but I forgot. It looks gross because I don't drain the water. We had country style ribs again, because 1, they're on sale and the freezer is stocked, and 2, I absolutely love these things. For a couple of nights I made taco meat, and just added sour cream and cheese. This was one of my favorite salads. Baked chicken and bacon. Carnivore for the win. Eggs cooked for 40 seconds in the microwave, add cheese, 2 sausage patties, and leftover avocado. Rabbit with broccoli casserole. My first time having it. Kind of tasted like boiled chicken. I will eat this for days. Cream cheese and Everything Bagel seasoning. Usually with pork skins. Cottage cheese and blueberries. I would have rather had a big ass pancake, but I do what I gotta do. We just all really want spaghetti and garlic bread like Levi here.
