Heads up: Do NOT cook it for 25 minutes, the cheese will burn. What I used: 1 lb lean ground beef A handful of diced onions. Go crazy with them if you wanna. I just used a handful of frozen and piled on the onion powder, I didn't have a lot of time. 1 10.5 oz can of Cream of Mushroom 1/2 a can of Rotel (you can use as much as you like, just make sure the liquid cooks down) 1/4 cup of sour cream 1 can of corn (I rinsed it in a strainer) 2 cups of Colby Jack, shredded (You know I added more cheese than that) A bag of frozen tater tots (2 cups) Seasonings What I did: Preheat the oven to 425° Take the tater tots, throw them on a sheet pan and stick them in the oven. You only want to cook them about half way. I let them sit in there while I was cooking and assembling everything else. I seasoned the beef with garlic powder, onion powder, a shake of Lawry's, and a super small shake of cayenne. You can add salt, we are just a no-salt household. We got the hypertension, yo. Brown the beef, and when it's halfway cooked, throw in the onion. If you want to go all out and use a bunch of diced onion, I would sauteé separately with minced garlic. However, I didn't get home until after 7:00pm, so I just used dried minced garlic along with the other seasonings. I added half a can of Rotel tomatoes, stirred it a lot, added in the can of Cream of Mushroom, just dump it in there undiluted, then the sour cream, stir a lot, the corn, then half the cheese, and stir. Take the tater tots out of the oven, dump the meat mixture into a baking dish, I added more of the seasonings, then put the half cooked tater tots on top, making sure you cover every inch of the mixture, then add the rest of the cheese. I also threw what mozzarella and sharp cheddar I had leftover in the fridge on there. Throw it uncovered in the oven for about 22 minutes. Not....25. Next time Scott said he will add hot sauce. He would also like to add to NOT cook it for 25 minutes. I was in the shower, dang, normally I would have been monitoring it. Enjoy.
