Ignore that tiny speck of Spanish rice on my plate. I love it, but I am eating low carb, I needed just a nibble!
This recipe is so easy. What you need: 3-4 chicken breast 1 jar of salsa Whatever seasonings that you like. I used onion/garlic/chili/Ranch powder. What I did: Place the chicken in your slow cooker, season up the chicken, add in the salsa, and turn it on low for about 4-5 hours. Shred. I served it with low carb tortillas, shredded cheddar, diced onion, sour cream, avocado, and Spanish rice. There were beau-coup's of leftovers, so we had it the next day for dinner, and there is still some left over. If you have issues with wet food as I do, use a slotted spoon :)
