Another scrumptious Crock Pot recipe. But sadly, I must note, it will be the last Crock Pot recipe, because.....Lily. This is super tasty, I could eat this every day. And you do have to brown meat so you kinda sorta have to turn on the stove, but not for too long. The heat index is 114 today, btw. This is what you will need. 32 oz frozen tater tots 1 lb lean ground beef, cooked and drained 1 diced onion If you liked diced green bell pepper, go for it. I use the dehydrated kind. A pack of taco seasoning 1 cup of sour cream A pack of sharp shredded cheese Salt, pepper, onion powder Diced tomatoes to top it off What to do: Brown the meat, onions, and if you insist, bell peppers over medium heat until the meat is cooked through and drained. Add the amount of water the taco seasoning pack suggests, and continue to cook until the sauce has thickened. Add the tater tots in a greased crock pot in as much of a single line that you can, then pour the meat mixture over it. In a cool lime green bowl, mix the sour cream, salt, pepper (to your taste), 1/2 tsp of onion powder, and half of the cheese. Spread this mixture over the tot/meat mixture. Cover and cook on low for 4.5 hours. Don't even lift the lid ONCE! After it is finished cooking, add the remainder of cheese, and give it ten minutes or so. Top with diced tomatoes and a dollop of Daisy, and enjoy. I may or may not have went back for a second bowl and plopped down in front of the TV and watched NASCAR.
